Ingredients

  • 1 cup yogurt (curd)
  • 2-3 small onions
  • 1 small beetroot, grated
  • 1 green chili
  • 1 stalk of curry leaves
  • 1 tablespoon coconut oil
  • 1/4 teaspoon mustard seeds
  • 1/4 teaspoon fenugreek seeds
  • 1/4 teaspoon cumin seeds
  • 2 dried red chilies
  • 1/2 cup water
  • Salt to taste

Instructions

  1. In a blender, mix together yogurt, water, and salt. Blend until smooth. If you have buttermilk, you can use that instead.
  2. Heat coconut oil in a pan over medium heat. Add mustard seeds, fenugreek seeds, cumin seeds, dried red chilies, and curry leaves. Allow them to splutter.

  3. Add crushed green chili and small onions to the pan. Sauté until the onions become soft.

  4. Add grated beetroot to the pan and mix well. Cover and cook over low flame until the beetroot is cooked through.

  5. Once the beetroot is cooked, turn off the flame. After 2 minutes, stir in the buttermilk mixture.

  6. Return the pan to the lowest flame and stir continuously. Turn off the flame when it starts steaming a little.Your Beetroot Moru Curry/ Beetroot Seasoned Buttermilk is ready to be served. Enjoy!
